A Quick Lamb Wraps recipe for Love Lamb Week
When it comes to quick tea-time meals, I hadn’t really considered lamb before. With lamb I think of slow cooked lamb for a Sunday roast, but it really is so much more versatile than that!
To celebrate Love Lamb Week which starts tomorrow (1st – 7th September) I was asked to cook some quick lamb wraps. Below are the ingredients and method if you want to try it yourself, it really is so easy and quick to do! Less than 20 minutes from start til finish.
Ingredients: (serves 2)
225g/8oz lean lamb stir-fry strips or lean lamb leg steaks, cut into 5cm/2inch strips
5-10ml/1-2tsp rapeseed or sunflower oil
1 garlic clove, peeled and finely chopped
50g/2oz mushrooms, finely chopped
15ml/1tbsp freshly chopped flat-leaf parsley
15ml/1tbsp freshly chopped mint
50g/2oz rice, cooked
Juice of ½ lemon
Salt and freshly milled black pepper
4 flour tortillas or flatbreads
60ml/4tbsp Greek yogurt
15ml 1tbsp mint sauce
I made mine for one person so I reduced the ingredients that I used. It was so easy to make that I won’t mind making it quickly for lunch in the future either. If you want to make it even quicker, you can actually buy frozen pre-chopped garlic I discovered the other day. It may seem slightly lazy (it is), but it really is so handy to have in the freezer.
1. Heat the oil in a large wok or pan and cook the garlic and lamb strips in batches for 3-4 minutes until brown.
2. Add the mushrooms and cook for 2-3 minutes. Stir in the herbs, rice, lemon juice and seasoning. Heat for 1-2 minutes.
3. To assemble the wraps, place the flour tortillas on a clean work surface. Mix together the yogurt and the mint sauce. Spread a spoonful over each tortilla and top with a large spoonful of the filling.
4. Fold up to make a neat roll, secure with a cocktail stick, if required, and serve immediately with a crisp salad.
The end result was absolutely delicious – even if I do say so myself. You could easily make it into a meal with a nice side salad or some home-made potato wedges if like me you have older children to fill up. Or to be extra filling just add more rice to their wraps!
I can be a bit of a disaster in the kitchen, but this recipe is really fool proof and if I can make it easily and quickly then so can you. Lamb is definitely going to be eaten in this house more now.
